Ingredients
2tspolive oil
1white onion cut into ¼” half-moon slices
1pound93% lean ground beef
1tspsalt
½tspfresh cracked black pepper
3-5dashes of Worcestershire sauce
4 100% whole wheat English muffins split in half and spritzed with oil spray on cut sides
1cupof fresh arugula or baby spinach leaves
2ozof blue cheese crumbles or goat cheeseOPTIONAL
Instructions
Place a large 12” skillet or wok over low-medium heat. Add olive oil and swirl to coat, then add the onions. Season with salt, mix well, and let cook over low heat for 30 minutes stirring frequently. You want a low and slow caramelization.
Meanwhile, mix the ground beef with 1 tsp salt, ½ tsp pepper, and Worcestershire sauce. Form into 4 oz patties and set aside.
When you have roughly ten minutes remaining on the onion cook time, toast the English muffins and season with salt and pepper. On the base of each muffin add the spinach or arugula. On the top of each muffin add the cheese. Cook the burger patties to desired doneness, about 4-8 minutes total.
Place the cooked burger patty on top of the spinach/arugula base. Top with the caramelized onions and the top muffin with the cheese.
