Ingredients

95% lean ground pork
¼
cup
ground oats
in a food processor
1
egg lightly beaten
1
shallot finely diced
1.5 oz
3
garlic cloves finely diced
10 grams
1
lemon zested and juiced
2
oz
feta crumbles
1
tsp
dried oregano
1
tsp
salt
½
tsp
pepper
¼
tsp
red pepper flakes
½
cup
chopped parsley
for garnish
Instructions
Preheat oven to 400 degrees.
Put all ingredients in a large bowl except for the parsley and mix with hands until well combined.
Divide the total weight of mixture by 16 and form into evenly sized balls. Place balls on baking sheet an inch or two apart.
Bake for 12-15 minutes or until cooked through and top with parsley for garnish.
