Place the pork, scallions, ginger, garlic, 1 tsp of the sesame oil, salt, pepper, and jalapeno into a mixing bowl. Mix until well combined. Portion into 4 equal sized patties.
Heat a medium/large skillet over medium-high heat. Once the pan is hot add the patties to the pan (no oil needed). Once the burgers have cooked halfway through, flip and continue to cook until fully cooked through, about 8-10 minutes.
While the burgers are cooking, combine the remaining sesame oil with the rice wine vinegar and liquid aminos. Whisk well and pour over the slaw, then toss to coat.
