Instructions
Grate the cucumber using standard box grater into a fine mesh strainer. Toss with ½ tsp of salt and let moisture strain out for 30 minutes.
In a small bowl, combine the Greek yogurt, lemon juice, apple cider vinegar, olive oil, garlic, pepper, ½ tsp salt, strained cucumber, and fresh dill/mint.
Cover and place in refrigerator for 1-2 hours prior to serving.
