Ingredients
1 ½poundspork tenderloin cut into 1” cubes
1tspsalt
1tsppepper
1tspdried oregano
1tbl fresh thymechopped
3tbl extra virgin olive oil
2tbl red wine vinegar
1lemonjuiced
5garlic clovesminced
6wooden skewers
Pita bread or leaf lettuce for servingoptional

Instructions
Season the pork cubes with salt, pepper, oregano, and thyme.
Combine oil, lemon juice, vinegar, and garlic into a gallon-sized Ziploc. Add in the seasoned pork and massage well to evenly coat all of the pieces. Close up tightly and store in the refrigerator for 4-24 hours.
Soak wooden skewers in water (fully submerged) for 30 minutes prior to skewering the meat.
Add the meat onto the skewers and discard the marinade
Cook skewers evenly on all sides by rotating every few minutes until fully cooked through, about 12-14 minutes.
Serve as a pita sandwich, lettuce wrap, salad, or platter.
