Instructions
Shape beef/lamb into 16 mini-patties (2 oz each) about 3 inches in diameter and ¼ inch thick. Top each of just 8 patties with ½ oz of feta. Top these 8 patties with the remaining patties and seal the edges by pressing them together.
Heat a large 12” skillet over medium-high heat. Add 1 tsp olive oil to the pan and swirl to coat. Arrange patties into the pan and cook each side for about 4-5 minutes, then flip and continue to cook another 4-5 minutes. Work in two batches if necessary.
Serve with toasted pita cut into quarters or leaf lettuce, along with desired toppings.
