Place a large 12” skillet over medium/high heat. Add olive oil and cook red onions for a few minutes until soft and translucent. Add garlic cloves and cook for another minute until fragrant careful not to burn.
Add in turkey and combine well into the onion and garlic mixture. Continue to break up turkey and stir in pan until cooked through. Add in the salt, pepper, paprika, cumin, and oregano.
Add in the bell peppers and jalapeno peppers and cook for a minute or so. Finally, add in the black beans, green chilies, sweet corn, and Rotel tomatoes. Stir until well combined and cook until heated through. Adjust seasonings as needed.
