ASIAN PORK BURGERS WITH SLAW

These Asian pork burgers with slaw are a nice change-up to your basic burger.  The burgers are so flavorful from fresh ginger and garlic and pair beautifully on top of the salty and tangy slaw.  The best part about this recipe is you can have it ready in under 20 minutes.

Eating healthy is all about having some go-to recipes that are easy and flavorful.  If you don’t enjoy what you’re eating you won’t be able to sustain the diet.  The same goes for preparation.  You need to find a balance using recipes that are interesting and more intensive along with easy and fast.  These Asian pork burgers are definitely easy and fast.

I use the help from my Microplane to finely grate the fresh ginger and the fresh garlic.  I use this tool often as it is quicker than mincing using a knife.  Plus, you really do get a fine grate, almost a juicy pulp, from the garlic and the ginger which mixes into the burger mixture very well.  This way, you don’t get any bites or pieces of the ginger or the garlic.  If you don’t have this tool yet in your kitchen, consider adding it in.  I also use it often for zesting lemons and limes, as well as grating fresh nutmeg.  If you’re still not sold,  read this Cooking Light article on more brilliant ways to use a Microplane.

Another shortcut that I use in this recipe is using store-bought coleslaw mix for my slaw.  Have you ever bought heads of cabbage and made your own slaw?  I have.  While it is delicious, it is super time-consuming and creates a mess!  I love to buy the big bags of slaw from Sam’s Cub, typically sold for $1.50-$2.00 for a giant bag that will last all week long.  Not only do I use it for true slaw salads such as this recipes, but I also like to mix it along with greens to add some crunch to green spinach/kale/arugula salads.  For more recipes that use bagged coleslaw mix try my Eggroll in a bowl and my Buffalo Shrimp tacos!

Asian Pork Burgers with Slaw

Ingredients
  

  • 1 pound 95% lean ground pork
  • 4 tsp finely sliced scallions
  • 1 tbs fresh ginger grated
  • 3 garlic cloves grated
  • 2 tsp sesame oil divided
  • 1 tsp salt
  • ½ tsp fresh cracked pepper
  • ½ tsp jalapeno finely diced
  • 4 cups of cabbage slaw
  • 4 tsp unseasoned rice wine vinegar
  • 2 tsp liquid aminos

Instructions
 

  • Place the pork, scallions, ginger, garlic, 1 tsp of the sesame oil, salt, pepper, and jalapeno into a mixing bowl. Mix until well combined. Portion into 4 equal sized patties.
  • Heat a medium/large skillet over medium-high heat. Once the pan is hot add the patties to the pan (no oil needed). Once the burgers have cooked halfway through, flip and continue to cook until fully cooked through, about 8-10 minutes.
  • While the burgers are cooking, combine the remaining sesame oil with the rice wine vinegar and liquid aminos. Whisk well and pour over the slaw, then toss to coat.
  • Serve each patty over a bed of slaw salad.
