CREAM OF RICE
This recipe for hot Cream of Rice is packed with a protein punch. Breakfast can be a challenging meal for many of us to get protein in. It is so easy to get exhausted from egg scrambles every day! So here is one of my favorite recipes for a moderate protein plus higher-carb breakfast.
I love to have this meal pre- or post-weight training when the body needs carbs most. Since the white rice in this cream of rice is a simple carb, it digests quickly, which also makes it perfect for a pre- or post-workout meal. But also…it’s a nice, comforting, hot breakfast on a day that you want something sweet. A few more perks to cream of rice are that it is high in iron, has zero sodium, is gluten free (for those that are intolerant), is fat free (so you can add your own tasty toppings), is easy to digest (for those with a wonky tummy), and is very bland on its own (a blank canvas to deliciously season it for what you’re in the mood for).
This recipe is very filling and takes longer to eat than it does to make, which is always a plus. You could easily adjust the levels of rice and egg to get in even more protein, or less carbs. The recipe as attached comes in at 277 calories (24P/38C/2F). Don’t be weirded out by the fact that there are egg whites in this. I promise, you won’t even know they are in there when you are eating it.
Cream of Rice
Ingredients
- 1 cup water
- ¼ cup cream of rice 45 grams
- ¾ cup egg whites 184 grams
- dash of vanilla extract
- pinch of nutmeg
- sprinkle of cinnamon
- sprinkle of salt
- 1 ½ tsp pepitas 3.5 grams
- 1-2 tsp Maple Syrup (optional)
Instructions
- Heat a small 8” skillet over medium/high heat with 1 cup of water in it. Once the water comes to a light boil (bubbles forming at the bottom), add in the cream of rice and stir with a rubber scraper for about a minute to cook. Throughout steps 1 and 2, stir often and move quickly as this recipe comes together in no time.
- Add in the egg whites, vanilla extract, and nutmeg, and cook for another 1-2 minutes, stirring constantly to cook the eggs in with the cereal. Once there is no longer visible egg liquid in the skillet and it is one combined texture, the eggs are done.
- Put into a serving bowl and top with cinnamon, salt, pepitas, and syrup (optional).
