PORK SOUVLAKI
Pork souvlaki is simple to make by letting chunks of tender pork marinate in flavors for hours before skewering and grilling to perfection. Olive oil, lemon juice, red wine vinegar, garlic, herbs, and spices swim deeply into the pork during the marinating process. If you have a grill, this is the recipe to use it for! If you don’t have a grill, you can still enjoy this recipe using a skillet.
I love the versatility of this souvlaki recipe because you can serve these skewers in so many ways. As a sandwich, on a salad, part of a pita platter, or served along a rice pilaf are a few options. If you are a fan of gyros, you will likely love this pork souvlaki in a pita sandwich! Grab yourself a bag of pita bread along with your favorite gyro toppings and make a fun spread. Pita bread is available at most grocery stores now and are even offered in traditional, whole wheat, and sometimes other varieties. Traditionally, Greeks use the pocket-less, traditional white version.
For the toppings, you can’t go wrong with some thinly sliced white onions, juicy tomato slices, and a hefty dollop of tzatziki sauce. Pork Souvlaki
Ingredients
- 1 ½ pounds pork tenderloin cut into 1” cubes
- 1 tsp salt
- 1 tsp pepper
- 1 tsp dried oregano
- 1 tbl fresh thyme chopped
- 3 tbl extra virgin olive oil
- 2 tbl red wine vinegar
- 1 lemon juiced
- 5 garlic cloves minced
- 6 wooden skewers
- Pita bread or leaf lettuce for serving optional
- Tzatziki sauce for serving optional
- Tomatoes sliced thin, for serving (optional)
- Onions sliced thin, for serving (optional)
Instructions
- Season the pork cubes with salt, pepper, oregano, and thyme.
- Combine oil, lemon juice, vinegar, and garlic into a gallon-sized Ziploc. Add in the seasoned pork and massage well to evenly coat all of the pieces. Close up tightly and store in the refrigerator for 4-24 hours.
- Soak wooden skewers in water (fully submerged) for 30 minutes prior to skewering the meat.
- Add the meat onto the skewers and discard the marinade
- Cook skewers evenly on all sides by rotating every few minutes until fully cooked through, about 12-14 minutes.
- Serve as a pita sandwich, lettuce wrap, salad, or platter.
I watch you both on your RV channel. This is the 1st time here but I like the recipe – I think I’ll try the Pork Souvlaki when I can figure out how to bring garlic into the house. My wife does not like it.
