ROSEMARY PORK CHOPS WITH GARLIC HERBED WHITE BEAN MASH
This rosemary pork chops with garlic herbed white bean mash recipe offers you an elegant dinner with an affordable price tag. The fresh herbs take ordinary ingredients and step them up to the next level. I used center cut pork loin chops which I typically find for $3-$4.50 per pound. The beans cost about $1 and the fresh herbs came in at $3. Along with some basic pantry staples this entire meal comes in under $10.
I am a huge fan of legumes, and I love incorporating them into my meals as a starchy carbohydrate source. I find beans to be more satisfying than other starchy carbs such as rice or potatoes because they keep me fuller longer. Beans are also higher in protein, nutrients, fiber, and antioxidants. While dry beans are extremely affordable, I do prefer the canned for the convenience. I love keeping canned lentils, black beans, fat-free refried beans, and garbanzo beans on hand.
The white bean mash in this recipe tastes like a cross of hummus and mashed potatoes. And they go so well with the pork chops. I usually end up slathering the mash on top of the chop while eating it. Make sure to include a non-starchy, fibrous vegetable onto the plate as well. Broccoli, green beans, asparagus, snap pea pods, and zucchini are all great options.

Plus, gone are the days where everyone believed you had to cook pork until well done. Pork can be cooked from medium-rare to well done, 145-160 degrees internally. I personally like my meat on the less cooked side, and I despise pork or beef that is overcooked. Once I learned how to properly cook a chop I started to enjoy them a whole lot more.
Rosemary Pork Chops with Garlic Herbed White Bean Mash
Ingredients
BEAN MASH INGREDIENTS
- 1 15.5 oz can of white beans (northern or cannellini), drained and rinsed
- 2 tbls extra virgin olive oil
- 1 tbls apple cider vinegar
- 2 tsp chopped fresh rosemary
- 2 tsp chopped fresh thyme
- 1-2 cloves minced garlic
- ¼ tsp salt
- ¼ tsp fresh cracked black pepper
- ⅛ tsp red pepper flakes for garnish optional
PORK CHOP INGREDIENTS
- 1 pound of boneless center cut pork chops excess fat removed
- 1 tbls finely chopped fresh rosemary
- ¾ tsp salt
- ¾ tsp fresh cracked pepper
- ¼ tsp smoked paprika
- 1 tsp extra virgin olive oil

INSTRUCTIONS
- In a small saucepan, prepare the beans by starting with 2 tbls olive oil over medium/high heat. Add the 2 tsp rosemary, 2 tsp thyme, and garlic and sauté for 2-3 minutes until fragrant, careful not to burn.
- Next, add in the white beans, ¼ tsp salt, ¼ tsp pepper, and vinegar. Blend with an immersion blender (or food processountil smooth. Reduce heat to simmer to keep warm.
- In a small bowl, combine the remaining1 tbls finely chopped rosemary, paprika, salt, and pepper. Season both sides of the pork chops with the seasoning mix and gently press into the chops.
- Heat a separate 10” skillet over medium/high heat. Add 1 tsp extra virgin olive oil, and add the chops into the pan. Cook the first side for roughly 4-5 minutes, flip, and cook the other side for another 4-5 minutes or until cooked through.
- If necessary, add a touch of water to the beans to loosen and make more silky, adding ½ tbls of water at a time.
- While serving, garnish the bean mash with red pepper flakes. Serve with non-starchy, fibrous vegetable such as broccoli, green beans, asparagus, or spinach.
