CUMIN BEEF TACOS

This Cumin beef tacos recipe is a simple shake-up to your average taco night! I usually make my beef tacos with a paprika-based seasoning blend…not today! Cumin and garlic take over in this recipe for a flavor change. The prep time is incredibly quick – just 5 minutes to chop an onion and garlic. I also add black beans to this dish to add a variety of textures and to give it some carbs. Remember, legumes are roughly 75% carbs, so anytime you add them to a pure protein source, you are essentially building a “complete meal”. As always, add in some green vegetables on the side to get in your micros and nutrients.  Be mindful of the carb content in black beans if you are pairing your taco meat with taco shells or rice.  Stacking carbs on carbs can quickly add up and may inflate your carb intake higher than you think.

My favorite way to eat this actually ended up being unexpected, and not in a taco form at all…I added in some frozen peas (more carbs and micros), pepitas (crunch), garlic chili sauce (spice), and a dollop of sour cream (creamy goodness).  I was hooked on this concoction for two straight weeks! It actually inspired another dish using frozen peas that you will see come out in the next few weeks.

Cumin beef tacos with black beans garlic and spices

Cumin Beef Tacos

Prep Time 5 minutes
Cook Time 15 minutes
Total Time 20 minutes

Ingredients
  

  • 1 tbls dried cumin
  • 1 ½ tsp salt
  • 1 tsp chili powder
  • 1 tsp dried oregano
  • ¼ tsp dried cayenne pepper
  • ½ cup water as needed
  • 2 tsp avocado oil
  • ½ onion diced 4.5 ounces
  • 2 cloves garlic minced
  • 1 pound of 96% lean ground beef
  • 1 can black beans strained and rinsed

Instructions
 

  • Combine the cumin, salt, chilli powder, oregano, and cayenne into a small bowl. Mix and set aside.
  • Heat a large skillet over medium/high heat. Add the oil, then the onions, and cook the onions until translucent, about 3 minutes. Add the garlic and cook for another minute or so.
  • Add the beef into the skillet and break it up well. Continue to cook until browned. Add in the spice blend, mix in with the beef, and reduce the heat to a simmer. Add the water if needed to help the meat absorb the seasoning. The added water will evaporate away. Stir in the beans to heat through.
